Spooky Black Bean BOO-dle Soup

Featuring High Plains black beans, hearty veggies, thick noodles, and a few spooky touches, this meal makes for a fun and cozy meal to enjoy before the Halloween festivities begin.

Ingredients:

6 cups cooked High Plains Black Beans
4 cups vegetable broth 
2 large carrots
2 Tbs olive oil
4 cloves garlic minced
1 medium white onion chopped
4 stalks celery chopped
½ tsp salt
½ tsp ground black pepper
¼ cup apple cider vinegar
3 oz udon noodles or other thick noodles
Optional: top with avocado and sour cream

How-To:

Combine 3 cups of black beans and 2 cups of broth in a blender, blend til smooth and set aside.
Peel your carrots then making two shallow slits down the length of your carrot, then remove a long slice and cut into slices to form pumpkin- looking slices.

Put a large soup pot over medium heat, with oil, then add garlic, onion, carrots, and celery. Cover and cook until onion is soft, about 5 minutes.
Add salt/pepper, blended black beans, remaining 3 cups of non blended black beans, broth, and vinegar.
Put back ver medium heat til it simmers, then cooking for 20 minutes until slightly thickened.
Prepare and boil noodles according to instructions on the package and add to soup.
To serve, top with a dollop of sour cream and sliced avocado (optional)
